You all know those stories when something cool was founded in the basment and then grew and shine. Well, again one of those. After changing few adresess, the first being one of our founders apartment, it’s moving to the coolest new building in Croatia. All green and sustainable @parkknezeva is place where we are opening open space lab, bakery, bistro and bar.
Bakery and lab function as one open space workplace with in-house developed fully automated fermentors for production and research of sourdough starters and other preferments. Besides that we developed microsiloses with stone mill milling fresh flour directly into the batch.
In our R&D we focus on ingredients selection, sourdough starter preparation, control and automation of mixing and bulk fermentation.
