Sourdough and biga as preferments are responsible for its airy structure, crispy crust and unique moistness and freshness. With wheat, semolina and Croatian E.V.O.O. as base we developed interesting combinations with olives, herbs, toasted seeds, spelt, etc.

In line with gourmet street food trends, slimmer version of focaccia, focaccina, is the perfect sourdough sandwich base.

Once upon a time, these classics were made patiently, properly and respecting the heritage of master bakers who were looking for the most delicious product. Since industrialization we have lost everything good found in them... In honour of what was once lost, we (who else?!) have decided to make these classics traditionally and artisanally, with natural ingredients and slow fermentation.
